My cat is a rescue. She is healthy but won’t drink water. How can I get her to drink water?

It is not uncommon to not see cats drink water very often. If they eat canned food they are getting moisture there and many cats drink in the sinks, bath drains, and yes, the toilet when no one is around. If she is active and you know she is eating I would not worry about it.
